Ao Yun — 'flying above the clouds' — is China's most ambitious wine. Created by LVMH in the foothills of the Himalayas in Yunnan, this high-altitude Cabernet Sauvignon is born of vineyards grown between 2,200 and 2,600 metres.
The wine surprises with its depth and freshness: dark fruit, spices, black tea and mineral notes, with fine tannins and lovely length. A curiosity turned benchmark, to cellar for 10 to 25 years.
Pairings: Peking duck, beef, refined Asian cuisine. Storage: lying down, 12–14 °C. Insured delivery throughout Switzerland.
